20 mins prepServes 4
A macro-friendly Big Mac Bowl recipe designed for weight loss, featuring seasoned potatoes, lean ground beef, fresh toppings, and a healthier Big Mac-style sauce made with Greek yogurt. Provides approximately 690 calories per serving with high protein.
1. Dice the potatoes into small cubes. Season them with 1 tbsp oil, 1 tbsp garlic powder, 1 tbsp paprika, 1 tbsp onion powder, 1 tsp salt, and black pepper to taste. Mix until evenly coated.
2. Air fry the seasoned potatoes at 400°F (200°C) for 20 to 25 minutes, shaking halfway through, until they are crispy. Alternatively, you can bake them at 425°F (220°C) for 30 to 40 minutes, flipping halfway.
3. While the potatoes cook, add the lean ground beef to a pan over medium-high heat. Season with 1 tbsp garlic powder, 1 tbsp paprika, 1 tbsp onion powder, 1 tsp salt, and black pepper to taste. Cook until the beef is browned, breaking it apart as it cooks. Drain any extra liquid or fat if needed.
4. Prepare the bowl toppings by dicing the white onion and tomatoes. Dice the bread and butter pickle slices. Shred the lettuce if it's not pre-shredded.
5. For the Big Mac Sauce, combine 1 cup Greek yogurt, 3 tbsp light mayo, 2 tbsp ketchup, 2 tbsp mustard, 8-10 finely diced bread and butter pickle slices, 2 tsp garlic powder, 1 tsp paprika, 1/2 tsp onion powder, 1/2 cup water, salt, and black pepper in a bowl. Mix thoroughly. Add 2 to 4 tbsp pickle juice if you prefer a tangier sauce.
6. To assemble, divide the shredded lettuce, crispy potatoes, cooked ground beef, diced onion, diced tomatoes, low-fat shredded cheese, diced pickles, and Big Mac sauce evenly into 4 bowls. Mix everything together in each bowl and enjoy.
